N°3: Couscous + Pollo Marroquí. Una combinación increíble y súper fácil de hacer. Couscous + Morrocan Chicken Style. An amazing and super easy combination to make.



 

Couscous + Pollo Marroquí
Ingredientes
  • 4 filetes de pechuga de pollo
  • 200 gr de couscous precocido
  • 1 taza de garbanzos cocidos
  • 1 cda de mantequilla
  • 1 pimiento rojo                                                                  
  • 2 tomates
  • 2 cebollines (con la parte verde incluida)
  • 1 cda de paprika
  • 1 cda de comino
  • 1 cda de canela
  • ½ cda de nuez moscada
  • ½ cda de pimienta negra
  • 200 cc de yogurt natural
  • 1 taza de mix perejil – menta
  • Jugo de un limón
  • Aceite de oliva
  • Sal a gusto
Preparación
  1. En una bolsa Ziploc, poner las pechugas de pollo junto con las especias. Mezclar bien y dejar reposar en el refrigerador al menos 1 hora. Mientras tiempo marinen, más impregnadas del sabor de las especias quedarán.
  2. Para el couscous. Poner seco en un bowl y agregar una cucharada de aceite de oliva. Mezclar. Agregar sal a gusto y verter el doble de agua recién hervida que cantidad de couscous. Dejar reposar tapado hasta que haya absorbido toda el agua. Agregar una cucharada de mantequilla, dejar que se derrita y separar el couscous con un tenedor.  
  3. Cortar el pimiento, el tomate (sacando las semillas) y la parte blanca del cebollín en cubos pequeños. Cortar las hojas verdes restantes en finas rodajas. Reservar.
  4. Una vez que el couscous esté frío, mezclar con las verduras cortadas y los garbanzos. Reservar.
  5. Para la salsa de yogurt, licuar este junto con el perejil, la menta, sal y pimienta. Las hojas no deben desaparecer por completo. Basta con una vuelta rápida o un par de pulsos con la minipimer.
  6. Sacar el pollo de la bolsa y saltear en un sartén con aceite de oliva precalentado. No olvidar agregar sal en este punto. Una vez que esté listo, dejar reposar unos minutos sobre una tabla, para luego cortar en diagonal.
Presentación
  • En un plato o en una bandeja grande poner una cama de couscous. Aliñar con jugo de limón, aceite de oliva y sal. Montar  trozos de pollo y verter salsa de yogurt rústicamente.
 

Couscous + Morrocan style chicken
Ingredients
  • 4 chicken breast fillets
  • 200 g of precooked couscous
  • 1 tbsp of butter
  • 1 cup cooked chickpeas
  • 1 red pepper
  • 2 tomatoes
  • 2 scallions (with the green part included)
  • 1 tbsp of paprika
  • 1 tbsp of cumin
  • 1 tbsp of cinnamon
  • ½ tsp of nutmeg
  • ½ tsp of black pepper
  • 200 cc of plain yogurt
  • 1 cup of mix  parsley leaves and mint
  • Juice of one lemon
  • Olive oil
  • Salt to taste
 
Preparation
  1. In a Ziploc bag, add the chicken breasts with all the spices. Mix well and let it stand in the refrigerator at least 1 hour. The more time you give it, the more imbued with flavor will the chicken breast be.
  2. For the couscous. Put it dry in a bowl and add a tablespoon of olive oil. Mix. Add salt to taste and pour twice the amount of couscous of freshly boiled water.  Let it stand covered until it has absorbed all the water. Add a tablespoon of butter, let it melt, and separate the couscous with a fork.
  3. Cut the pepper, tomatoes (removing the seeds) and the white part of the scallions into small cubes. Cut the remaining green part into thin slices. Reserve.
  4. Once the couscous is cool, mix with chopped vegetables and chickpeas. Reserve.
  5. For yogurt sauce, blend it along with the parsley, mint, salt and pepper. Leaves should not disappear completely. Just make a pair of pulses with the blender .
  6. Remove chicken from bag and saute in a preheated pan with olive oil. Do not forget to add salt at this point. Once they are ready, let them stand for a few minutes on a board and then cut diagonally.
 
Presentation
  • In a plate put a bed of couscous. Dress it with lemon juice, olive oil and salt.  Mount on top of it the chicken pieces and roughly pour yogurt sauce.
